What print server are you using on the Linux side?  (CUPS?  LPRng?)
Any idea if the Mac can print using the lpr or ipp protocols?

If you're using CUPS on Linux, try adding a line like this to your
inetd.conf:
printer stream tcp nowait lp /usr/lib/cups/daemon/cups-lpd cups-lpd

Then restart inetd and see if things improve.

Not necessarily. There are lots of Unix print systems, and it wouldn't
surprise me if Apple came up with its own.
