I have been working with VMware Server (GSX Server before that) and some 
of their physical to virtual conversion products for about a year now. 
The past few months have also been spent doing a good amount of research 
on the ESX server version.  I hope to get that installed in our test 
environment next week, provided I find a RAID controller card on their 
supported hardware list.

I have a few production VMs running on VMware Server, critical apps, but 
light loads.  I also have the vast majority of my test environment for 
the devs virtualized.  The main VM test server now has CentOS as the 
host OS and has Linux and Windows VMs running on it.

Over the next few months we should be moving more production services 
into VMs - most likely on the ESX version.

I would be happy to answer what questions I can based on my experiences 
thus far.

This might also be a good time to ask how folk's experience with Xen or 
variants such as Virtual Iron have been.
