[COLUG] File Association Questions

I am running Gnome (Ubuntu Dapper) and want to know how to manage what
in Windows is file association, i.e. which program to use to open a
file.
I've seen the Open With tab on the file properties display, but there
are some options there that seem to be permanent (i.e. they can't be
deleted).
For example, I installed the Screem HTML editor and now it seems like it
wants to be the default Open application for any text file. This has
always been one of my beefs about file associations in Windows, I think
an application is very rude when it hijacks file associations.
I do a lot of Python work and have .py files set up to open with Idle.
However, if the file is also flagged as executable, I have to use the
Open With Other application sub-menu to open it with Idle, although
Screem and Text Editor show up as choices in the main context menu
(right click).
