Charlie,

Depending on your need for processing power and the necessity of video 
out, you might want to just order a bunch of Chumbies, take them apart, 
and get rid of (or sell) the extra parts.

It's no speed demon, but for $180 you get:

350 MHz ARM Processor, 64MB Flash, 64MB RAM
300x240 touchscreen LED backlit LCD display
Serial Port (TTL, but easy to adapt to RS232)
2x USB Ports
Embedded Linux Distro

...and a bunch of parts you might not need, like:

RALink USB Wireless Adapter
Gyroscopic Accelerometer
Leather and Stuffing parts
12v adapter
2x 2 watt speakers
Switches
Microphone
License for Micro Flash Player
"Entertainment software"  (Internet radio, flash player, alarm clock, etc)

Note that the PCB schematics for Chumbies are open source, so if you have 
a source for PCB's and the various parts you can also build your own 
motherboard.
