The nvidia drivers (and the nv driver in Ubuntu) works perfectly well if 
there is only 2GB of ram installed in the system, I even tried to cheat 
and tell the kernel via grub there was only 2.5 or 2, but this didn't 
seem to work.

I'm not the only one that found this was the case:

There is even a Ubuntu specific bug on it:

I went so far as to try Fedora, their nv driver works, but the nvidia 
driver still fails and to date I have been replicate what Fedora has 
done to make it work on Ubuntu.
