If you get an nVidia card you'll be forced to use proprietary drivers,
which (though they may work in the short term) isn't a good position to
be in for the long term.
At this point you're probably better off with an ATI card. It's possible
you may still be stuck with proprietary drivers to get the dual-monitor
feature (I'm not sure), but the free drivers for ATI cards are quickly
improving their capabilities thanks to support from ATI.
Actually if you don't care about 3D capabilities, an old Matrox Millennium
may be your best bet for dual monitors. Matrox cards are great for that,
and even the single-interface ones are happy to be plugged in alongside
other cards for more monitors. (PCI is fast enough for 2D.)
Unfortunately more recent Matrox cards have gone the proprietary-driver
route.
