Yeah, I dislike that feature myself. Fortunately you can turn it off.
Right-click the task list applet (not a specific task's entry on the
list, but either a blank space or the little grabby-handle on the
left end) and there should be a context menu, which should contain
a Preferences option. Click that, and the Window List Preferences
dialog should open. In the Behavior tab there are some options
that may interest you.
There are not as many options as I would like. I would _like_ to
be able to tell it, for instance, to never group gnome-terminal
windows together that are using different profiles. But last I
checked there were at least a couple of options.
